The English cucumber needs to be shiny and crisp. As far as the onion is concerned, you can use either red onion or spring onion. The olive oil needs to be extra virgin olive oil. I love Kalamata olives in the salad. You can never go wrong with Kalamata olives  but you can use any other Greek olives you wish.

Ingredients

  • 3 large  fresh tomatoes
  • 300g feta cheese
  • 1 onion
  • 1/2 english cucumber
  • Kalamata olives
  • oregano
  • 1/2 teaspoon salt
  • 50ml extra virgin olive oil
  • green pepper (optional)

Instructions

  • Start by assembling all the ingredients in the kitchen counter.
  • Wash the tomatoes, cucumber and green pepper under running water.
  • Slice the tomatoes into wedges.
  • Slice the onion, emince cut.
  • Slice the green pepper.
  • Continue by cutting the cucumber in half ,length wise, and then into small 1cm pieces. You can either remove the skin of the cucumber or not. I prefer not to peel the cucumber.
  • Cut a slice of the Feta cheese and then into cubes.
  • In a large salad bowl, add the tomatoes, onion, cucumber, olives and feta cheese.
  • Dress the salad with olive oil, salt and oregano.
