Mini Feta Bread Buns

Mini Feta Bread Buns are fluffy little buns with a delicious cheese filling. They are golden yellow on the outside, just like bread buns with a savoury tangy Feta cheese filling! The recipe is easy to follow and requires very few ingredients which you most likely already have in your cupboard – self-raising flour, yeast, sunflower oilsugar, salt, milk, egg and Feta cheese!

These fluffy little rolls are filling enough and are bound to become a family favourite. They smell amazing while baking and taste great afterwards. The dough is easy to make and is very versatile. You can create variations of these Mini Feta Bread buns substituting Feta cheese with semi hard cheese, mini sausages or even steamed vegetables/ ‘Horta’ ( spinach/ leek).

Dough

To make the dough for the tangy Feta bread rolls, warm up milk and water (up to 30C or 86F) and combine them with yeast and sugar. Let the yeast become activated till its frothy which will take approximately 5-6 minutes. In the meantime warm up the sunflower oil to 30C or 86F. Once the yeast has become activated, add the warm sunflower oil to it. Then slowly add the sifted flour combined with salt and make a dough. Knead the dough and let it proof for 40 minutes or so, or until it doubles in size.

With a pastry cutter, cut the dough in circular pieces and continue by placing the savoury Feta filling on the dough circles.

To prepare the tangy Feta filling simply crumble the Feta cheese with the back of a fork and mix it with your egg and some salt.

Assemble

When placing the Feta filling on the dough circles make sure you leave enough space for the dough edges to seal. To seal the edges simply brush them with a little bit of water and squeeze them together.

Once you have filled the mini bread rolls and sealed them, brush them with egg wash and bake them at175C or 347F for 25 minutes. 

I used a 7.5cm or 3 inches pastry cutter and made 35 mini Feta bread buns. You can use slightly smaller of larger pastry cutters making more or less rolls in the end. Remember though that smaller bread rolls will require less baking time and larger ones, longer baking time.

Ingredients

Dough:

  • 840gr flour
  • 250gr water
  • 250gr milk
  • 200gr sunflower oil
  • 14gr dry yeast
  • 1 teaspoon salt
  • 1 tablespoon sugar

Feta filling:

  • 700gr Feta cheese
  • 1 egg
  • ½ teaspoon salt

Egg wash:

  • 1 egg
  • 1 tablespoon water

For this recipe you will need: 1 small saucepan, 2 medium sized mixing bowls, 1 small mixing bowl, baking paper,  baking trays, rolling pin and a pastry cutter.

Instructions

Dough:

  • In the small saucepan combine water and milk and warm them up to 30C or 86F.
  • Pour the warm milk and water in a mixing bowl and combine them with the yeast and sugar. Whisk thoroughly and let the mixture rest for 5-6 minutes, until the yeast is activated.
  • In the same small saucepan, warm the sunflower oil to 30C.
  • Sift the flour with the salt in a large bowl.
  • Once the yeast is active, add the warm sunflower oil and small amounts of flour. Continue by adding small amounts of flour and knead it until the dough is turns into a soft ball.
  • Cover the dough with kitchen towels and let it rise for 40 minutes.

Feta filling:

  • Whilst the dough is rising, carry on by making the Feta cheese filling. In a mixing bowl, crumble the Feta cheese (either with your hands or the back of a spoon). Add an egg and season with salt. Mix the Feta cheese with the egg. Set the savoury mix aside.

Egg wash

  • In another bowl combine an egg with one tablespoon of water and whisk until combined. Set the egg wash aside too.

Assembling Mini Feta Bread Buns

  • Line baking trays with baking paper and preheat the oven to 175C or 347F.
  • Once the dough has risen and has doubled in size, divide the dough into 2 portions. Roll out each portion in 1cm thickness. Cut the dough with a cookie cutter. I used a 7.5cm or 3 inches pastry cutter and got 35 bread buns.
  • It is time to assemble the mini Feta bread buns. Place one tablespoon worth of the savoury Feta cheese mixture into each round dough portions. Seal the ends of the dough with a little water.
  • Lay the mini Feta bread buns in the baking trays making sure there is enough distance between them (3-4cm).
  • Brush the Feta bread buns with the egg wash and bake them for 25 minutes at 175C or 347F.
