Greek chicken with peas

Greek chicken with peas is an easy and quick dish to make.

Peas are high in nutrients and antioxidants, if you are like me, you will always find a bag of frozen peas in my freezer!! So if you are looking for a delicious, quick and healthy mid week dinner, look no more!

Frozen peas are great for this Greek chicken with peas recipe. Just take them out of the freezer and straight into the saucepan. Bear in mind that cooking any vegetable from frozen will take a bit more time as it needs to defrost. In addition, bear in mind that you will require less water when cooking frozen vegetables.

Ingredients

  • 2-3 chicken breasts/ drumsticks
  • 500g peas
  • 1 onion
  • 1 lemon juice
  • 1 tbsp mustard
  • 55mls /2 fl oz/ 1/4 cup olive oil
  • 125mls/ 4 fl oz/ 1/2 cup water
  • salt
  • black pepper

For this recipe you will need a frying pan and 1 saucepan

 

Instructions

  • Assemble all the ingredients and equipment
  • Chop the onion finely and add it to a saucepan. Sautee the onion for approximately 2-3min until golden.
  • Add the peas with a pinch of salt and  water. Stir and the peas on gas for approximately 10-15mins.
  • Cut the chicken into thin strips. Season the chicken and pan fry it until golden yellow. Add mustard and the lemon juice at this point. Fry for 20mins.
  • Transfer the chicken into the saucepan with the peas and stir.
  • You can now enjoy this delicious quick and easy chicken with peas recipe.

Tips:

You can serve this with greek  roasted Feta and /or with any green leafy Salad.
